With our Bottled-in-Bond American Single Malt we tapped into the rich history of Scottish whisky and the highest standards of pre-Prohibition American whiskey to create our own version of history.
Our Bottled-in-bond Single Malt is only the second of it’s kind to exist in the United States and the first one available on the West Coast.
Why are we one of the only bottled-in-bond single malts? Because it is extremely difficult to do. Bottled-in-Bond has a higher production standard than single-malt Scotch and more protective rules than Cognac. It must come from a single US distillery and be the product of a single distilling season. Bottled-in-bonds whiskies must also be aged for at least 4 years in oak barrels, in a federally bonded warehouse, bottled at 100 proof and contain no additives whatsoever.
These regulations are a throwback to the Bottled-in-Bond Act of 1897 which was lobbied for by Colonel E.H. Taylor, a crusader for higher quality standards in American whiskey. At the time, many producers were releasing un-aged grain whiskies flavored with additives like tobacco and caramel food coloring. Producers were even found to include dangerous additives like iodine, lye and ammonia.
Our Single-Malt is made of 100% non-GMO malted barley grown in California, Washington and Ireland. We mill, mash, ferment, distill, barrel-age and bottle it on site. It doesn’t get much better than this.
Our years of hard work and patience have truly paid off. Our Single Malt is an incredible, densely layered and malty taste to behold. It is a rich, chocolatey dram with notes of pine, dried apple and toasted malt. It’s drips of nostalgia of family camping trips and romantic nights curled up in the living room by the fire. It is a seriously delicious dram.
